You can literally parry every attacks in Sekiro and if you're good, parry the genechiro multiple slashes combo (very fast). Most bosses always break into red attack to stop player's hyper aggression in Sekiro. In FO, it's yeehaw "I am hyper armour", which ironically come from the same copy cat that is Nioh.

Only play on Grand Master if you want it to be harder than it was made to be. Jedi Master is the mode the developers meant for the game to be played in.
